Summer Recipe Rewind ~ Grilled Parmesan Potatoes

I first posted this recipe about a year ago and it’s a pretty popular one here on ARAD.  These potatoes are really so good and super easy to toss on the grill when you are grilling something else.  Give them a try!

Grilled Parmesan Potatoes

1 pound baby red potatoes
1 bunch green onions, chopped
2 tsps vegetable oil
1 tbsps Parmesan cheese
1 tsp dried oregano
1/2 tsp garlic salt
1/4 tsp pepper

Cut baby potatoes in half and place in a large bowl. Add onions and oil and toss to coat well. Spoon in the center of a large doubled piece of no-stick aluminum foil (make sure to pile potatoes on no-stick side).

Combine the rest of the ingredients and toss over the top of the potato/onion/oil mixture. Fold foil into a pouch and seat tightly.

Grill for 18-20 minutes over medium-hot heat or until potatoes are tender.

Be careful opening the foil as steam will escape.

Makes 4 servings.

Happy Cooking!

  1. I just picked up some baby red potatoes, and I was looking for something potato-y to do with grilled chicken tomorrow – thanks for the great idea, Nancy!
