I made this for the first time last night and we loved it! It’s easy to toss together although some pre~planning is needed because you need to use cooked chicken. I used my recipe for cooked chicken ~ Cooked Chicken for Recipes
Chicken and Rice Casserole
1 (10 ounce) pkg yellow rice mix
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped carrot
1 tbsp olive oil
2 cups cubed cooked chicken
1 (15 ounce) can black beans, drained
1 (10 ounce) can diced tomatoes and green chilies, undrained
2 cups grated Monterey Jack cheese
Preheat oven to 350º. Prepare the rice according to the package directions.
While the rice is cooking, saute the onion, pepper, carrots in the 1 tbsp oil in a medium skillet over medium heat until tender ~ about 8-10 minutes.
In a large bowl, combine the just cooked rice, onion mixture, beans, tomatoes/chilies and 1 1/2 cups of the cheese. Spoon into a lightly greased 13×9 dish. Sprinkle the remaining cheese over the top.
Bake, covered, for 30 minutes. After 30 minutes, uncover and bake 10 more minutes until the cheese is completely melted.
Makes 6-8 servings.
