These potatoes are just HEAVENLY! They are so easy and would be perfect for any meal from a weeknight dinner to your special holiday meal. You can use any type of potatoes you have. I used the Yukon Gold because they happen to be my favorite at the moment.

Cream Cheese and Chives Mashed Potatoes
2 lbs Yukon Gold potatoes, peeled and cubed
1 (8 ounce) pkg cream cheese, softened
1/4 cup butter, softened
1/4 cup milk
1 tbsp chopped fresh chives
1/4 tsp black pepper
Garnish with extra chopped chives if desired
Place potatoes in a large saucepan and cover with cold water. Bring to a boil and cook until tender, about 10 to 15 minutes.
Drain potatoes well and return to saucepan. Cut cream cheese into cubes and add it and the butter to the potatoes in the pan.
Using a potato masher, mash this mixture until the cream cheese and butter are melted and incorporated well. Add milk, chives, a few dashes of salt and pepper; stir until well combined.
Garnish with chopped chives if desired.
Makes 4 to 6 servings.
