I am always looking for side dishes to put on the grill with the main dish and I found this recipe on Taste of Home awhile back. It’s super easy to make. I would recommend that if you try this recipe, use the no-stick aluminum foil as it’s so much easier to get the foil off.
Grilled Parmesan Potatoes
1 pound baby red potatoes
1 bunch green onions, chopped
2 tsps vegetable oil
1 tbsps Parmesan cheese
1 tsp dried oregano
1/2 tsp garlic salt
1/4 tsp pepper
Cut baby potatoes in half and place in a large bowl. Add onions and oil and toss to coat well. Spoon in the center of a large doubled piece of no-stick aluminum foil (make sure to pile potatoes on no-stick side).
Combine the rest of the ingredients and toss over the top of the potato/onion/oil mixture. Fold foil into a pouch and seat tightly.
Grill for 18-20 minutes over medium-hot heat or until potatoes are tender.
Be careful opening the foil as steam will escape.
Makes 4 servings.
