I usually make my Mom’s version of potato salad but I saw this recipe awhile ago and thought I would give it a try. It’s pretty simple but really very good. It doesn’t make a ton of salad like some recipes and that’s a good thing since only two of us eat it. I know I’ll be making this often during the summer since it’s much less labor intensive.
Red Potato Salad
1 1/2 lbs red potatoes, cut into small cubes
1 cup mayonnaise
1 tbsp yellow mustard
1 tbsp white wine vinegar
2 tsps sugar
1/2 tsp black pepper
1/4 tsp salt
1/3 cup sweet pickle relish
1/3 cup chopped green onion
3 hard cooked eggs, chopped
Place potato cubes in a large saucepan, cover with cold water, and bring to a boil. Reduce heat and simmer for 8-10 minutes or until potatoes are tender. Drain.
In a large bowl mix together the rest of the ingredients except eggs and potatoes. Mix thoroughly. Add potatoes and eggs and toss until both are well combined. Cover and chill for 2 to 24 hours.
Makes 8-10 servings.

This was a hit at our end of summer barbeque. I tripled the receipe because we had about 50 people. I also added crisp bacon just before serving.
