Before I get to the recipe, here’s what happens when a Honda Civic meets an SUV ~ oh no!

Nobody was hurt and DS’s Honda got the worst of it.

On to the recipe:

I like tomato-y pasta dishes and usually without meat.  It’s one way we can save a little money and not eat meat.  The original recipe called for ground beef but you could use ground turkey or chicken or whatever you like as well as leaving it out.

Baked Rotini

1 lb. ground beef
1 small onion, chopped
1 small green bell pepper, chopped
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 (4.5 ounce ) jar sliced mushrooms
1 tsp salt
1/2 tsp dried basil
1/4 tsp garlic powder
1/4 tsp dried oregano
1/4 tsp tsp crushed red pepper flakes
8 ounces cooked rotini
2 cups shredded mozzarella cheese

Cook the ground beef, onion, and green pepper in a large skillet, cooking until beef is thoroughly cooked. If not using meat, saute onion and green pepper in a small amount of olive oil until soft. Drain meat and return to skillet; no need to drain if not using meat.

Stir in crushed and the rest of the ingredients EXCEPT the cooked rotini and cheese. Bring the ingredients in the pan to a boil, reduce heat, and simmer, stirring occasionally, for 20 minutes. Stir in rotini and cheese. Spoon into a lightly greased 13×9 pan.

Baked, uncovered, at 350º for 35 minutes.

Makes 8 servings.

  1. Glad to hear everyone was ok. Our car was hit twice in less than a year (not our fault) and what a pain to fight with insurance companies to get it all fixed. Hopefully your DS can easily roll through all of the paperwork and get the car fixed up quickly.
