This roast chicken recipe is my new favorite. The flavor really goes through the meat and is just delicious. It’s easy to make as well. I think it’s best if you use a smallish chicken so the flavor doesn’t get “lost”. Mine was about 4 lbs.
Lemon Herb Roast Chicken
2 tsps Italian seasoning
1/2 tsp seasoning salt
1/2 tsp mustard powder
1 tsp garlic powder
1/2 tsp black pepper
1 whole chicken, 3 or 4 lbs. total
2 tbsps olive oil
Preheat oven to 350º.
Combine spices and set aside. Clean chicken and place in a 9×13 baking pan. Sprinkle 1 1/2 tsps. of the seasoning mixture inside the chicken. Rub the remaining mixture on the outside of the chicken.
Squeeze the 2 lemons in a small bowl and add the olive oil; mix well. Drizzle over the chicken.
Bake for about 1 1/2 hours or until juices run clear and the chicken is thoroughly cooked. Baste several times with the olive oil/lemon mixture in the bottom of the pan.
