Happy Veteran’s Day and BIG thank you to all our veterans, those serving now and those thinking of serving in the future!!!

This roast chicken recipe is my new favorite.  The flavor really goes through the meat and is just delicious.  It’s easy to make as well.  I think it’s best if you use a smallish chicken so the flavor doesn’t get “lost”.  Mine was about 4 lbs.

Lemon Herb Roast Chicken

2 tsps Italian seasoning
1/2 tsp seasoning salt
1/2 tsp mustard powder
1 tsp garlic powder
1/2 tsp black pepper
1 whole chicken, 3 or 4 lbs. total
2 lemons
2 tbsps olive oil

Preheat oven to 350º.

Combine spices and set aside. Clean chicken and place in a 9×13 baking pan. Sprinkle 1 1/2 tsps. of the seasoning mixture inside the chicken. Rub the remaining mixture on the outside of the chicken.

Squeeze the 2 lemons in a small bowl and add the olive oil; mix well. Drizzle over the chicken.

Bake for about 1 1/2 hours or until juices run clear and the chicken is thoroughly cooked. Baste several times with the olive oil/lemon mixture in the bottom of the pan.

4-6 servings.

  2. i’ve never roasted in my entire life. this recipes seems really easy to make so i’ll include it in my “open file”. very nice photos, by the way. i tried taking pics of dishes that I cook but the pics don’t turn out as yummy as the finished product. any tips?

  3. This looks so good. I will probably make this for Thanksgiving instead of Turkey. I have one of those new wave ovens, I wonder if I could cook this in that type of oven. I think it would probably cook faster but chicken usually does really well in it.
