This recipe is super simple. It does use Lipton onion soup mix which I think is waaaaaaay too salty. I’m sure you can find a recipe online somewhere to make your own version that is better for you. I used a package of new potatoes I bought at the farm stand. They were pretty small already so some I just halved and others I just left whole.
Onion Roasted Potatoes
1 envelope Lipton onion soup mix
4 medium potatoes (any kind) cut into chunks (about 2 pounds of potatoes)
1/3 cup olive oil
Preheat oven to 425º.
Combine all ingredients in a 13×9 baking pan.
Bake, stirring occasionally, 35 minutes or until potatoes are tender and golden brown.
Makes 4 servings

Jaime ~ yes, it’s the recipe from the box. I’ve never had a problem with it being dry. It might be the type of potatoes used.
is this the recipe on the lipton onion soup mix box? if so i would be eager to hear how you make it so that it’s still good. i found mine to be way too dry and not good at all.
