Oven Roasted Potatoes

I found this recipe on Allrecipes and changed it around a little bit and we loved it. I used tiny new and red potatoes that I had gotten at the farm stand. I just cut the bigger ones in half and left the really tiny ones whole. The picture isn’t great ~ sorry about that.

Oven Roasted Potatoes

1/8 cup olive oil
1 tbsp minced garlic
1/2 tsp dried basil
1/2 tsp dried dill
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp dried crushed red pepper flakes
1/2 tsp salt
4 large potatoes, peeled and cubed or an equal amount of tiny potatoes, halved

Preheat oven to 475º.

In a large bowl, combine all ingredients except potatoes and mix well. Add potatoes and stir until coated. Place potatoes in a single layer on a baking sheet. I lined my sheet with Reynolds Release aluminum foil and it was super easy clean-up.

Roast for 20-30 minutes, turning occasionally.
