This cookbook has a great set-up.  Each chapter is a day of the week and each day is a different type of meals with corresponding recipes:

If you win, you can look for the recipe that I have in this cookbook!

The giveaway will run from today to February 14 at midnight. I will use random.org to choose the winner. To enter, comment with your favorite weeknight dinner. You must comment on this post to be in the giveaway. I will email the winner on February 15 and mail out the cookbook shortly after I hear from the winner. I chose two recipes that go together from the Tex-Mex chapter.  Mix-Your-Own Taco Spice and Fiesta Chicken Soft Tacos.  Both were excellent.  The spice mixture is a little spicy so if you like things less spicy, use less red pepper flakes or leave out altogether.  I also forgot to add the paprika to the spice mixture but didn’t miss it at all.   The tacos were very easy to make.  My only suggestion would be to cut the chicken in small cubes or strips before sauteing.

Mix-Your-Own Taco Spice

2 Tbsps chili powder
1 tbsps ground cumin
2 tsps salt
2 tsps pepper
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp oregano
1/2 tsp red pepper flakes

Mix all ingredients together in a small bowl. Store in a small covered jar. Makes about 1/3 cup.

COOK’S NOTE: I put the leftover mixture in a ziplock bag and put it in the freezer where I keep all my home-mixed rubs and spice mixtures.  Use right from the freezer.

Chicken Taco !

Fiesta Chicken Soft Tacos

2 tbsps oil
1/2 onion, diced
1/2 green pepper, diced
2 to 3 garlic cloves, minced
1 lb boneless, skinless chicken, cubed
1 to 2 tbsps taco seasoning ~ I used 2 tbsps
1 1/2 cups chunky salsa
4-6 soft taco flour tortillas, warmed
Garnish with your favorite taco toppings

Heat oil in a skillet over medium heat. Add onion, green pepper and garlic; saute until tender being careful not to let the garlic burn. Add chicken and cook until chicken is no longer pink ~ about 5-8 minutes depending on size of chicken cubes. Stir in the taco seasoning and the salsa and simmer for 3 minutes.

To serve, spoon mixture onto tortillas. Garnish and fold the tortilla over.

Makes 4-6 soft tacos

  1. I like anything my family decides to surprise me with, usually spaghetti and meatballs! They do it with love and that makes it so special. I hope I win this, what a nice birthday gift. My birthday is Valentines Day!

  3. My favorite go to week night dish is a baked pasta casserole. I can make it the night before, put in fridge or in oven. Or, make and bake.

  4. I have to say my favorite is roast or chili in the crockpot. It is so nice to come home to dinner already made and warm and the house smelling so great.

  6. My favorite week night dinner is oven-baked tacos! I make the meat mixture with salsa, cooked ground beef, onions, and black beans, stuff it in taco shells with cheese, and bake. So easy and tasty! My husband loves them.

  7. Our “go to” meal on weeknights is a noodle or rice casserole with chicken and veggies. That’s when I don’t think ahead to throw something in the crockpot in the morning.

  11. my family’s favorite is bacon-wrapped chicken, it’s delicious but takes a long time to make…. it’s usually reserved for nights we have guests. Spaghetti is our favorite quick meal, meatsauce or maybe meatballs to change it up a bit 🙂 Thanks for the fun contest!

  12. Good to know I’m not the only one that loves shepard’s pie or pasta, but I think the absolute favorite is Chicken Pot Pie. Everything in one dish with a flaky crust ~ comfort food at its finest!

  15. Looks yummy! I also make my own taco seasoning, but I also add some masa (corn flour) so it thickens a little bit. We don’t really have one favorite thing we love for weeknight dinners. I usually vary what I make. Some of my guys favorites are: meatloaf, tacos, spaghetti, BBQ chicken, breakfast for dinner…etc. Thanks for sharing the recipe and hosting a giveaway!

  17. I guess I would have to say that our favorite meal is baked tilipia. We are trying to eat healthier and eat more fish, and I hate the way I make salmon, but I love tilipia. I make it different ways and with different sides so it never gets boring.

  19. Sunday breakfast is my favorite meal of the week to fix. Anything from pancakes to waffles to french toast to breakfast casseroles.

  20. Leftovers because with working full time, I cook enough on the weekend to make weeknight dinners easy and all I usually need to add is rice or potatoes or veggies to make a complete meal.

  22. Wow we have so many weeknight favorites but mine has to be old- fashioned, made from scratch Macaroni and Cheese…straight from the oven comfort food. On these cold, snowy nights here in Western New York, hot from the oven hits the spot and warms the belly!

I make a sourdough crust from my starter in my bread machine and when my husband gets home from work we stretch the dough out into whatever shape suits the moment, add our sauce and favorite toppings and pop into the oven.   27. My fav weeknight dinner is meatloaf because it reminds me of my grandma, my husbands is my beef & noodles and my daughters is a ramen noodle skillet dinner I make. A new fav of the whole family is a bbq chicken crockpot dinner, it’s easy and wonderful! Thanks for giving us a chance to win the new cookbook!

  28. We have a rotation of favorites! Baked fish sticks and tater tots, Mexican casserole, hamburger steaks and mashed potatoes, spaghetti, chili, or soup and grilled cheese sandwiches.

  29. One of our favorite weekday dinners is chicken enchiladas. We usually do a quick rotissare chicken with mashed potatoes and salad one night and I will make enchiladas for the next night with the leftover chicken and brown rice cooked with half water and half Pace. We also boil the bones to make our own broth for chicken noodle soup on the weedend…..

  30. My favorite weeknight dinner varies depending on the season. Fall and Winter = soup and grilled cheese sandwich. Spring Summer – nothing like a fresh ground burger on the grill, seasoned with Montreal Steak seasoning and served with sliced onion, tomato, cheese an lettuce. MMMMMMmmmmmmmm!!!

  31. We have a couple of go to favorite weeknight dinners at our house. My son loves it when we make homemade pizza. I am partial to meat loaf and mashed potatoes myself. My wife loves the warm chicken salad we make.

  32. We live in florida so the favorite go to meal is grilled chicken.I marinate the chicken a couple of different ways to change up the flavor. Thanks for giving us a chance to win.

  33. Our favorite weeknight dinner is meatloaf, baked potatoes and a salad. I make the meatloaf the night before or the morning before I go to work, then my husband or one of the kids pops it in the oven along with the potatoes, as I’m leaving work. I toss the salad together when I get home and dinner is on the table in minutes.

  34. My favorite weeknight dinner is whatever can be done quickly and is healthy. Pasta is normally one of the quickest homemade dinners, not the healthiest choice though. In general, I am trying to create variety and eat everything. I just found out it’s easier when I write down what we eat!

  36. hard to choose!! We have a few favorites…My husband’s favorite is Shepherd’s Pie…easy, quick, and can be prepared ahead. My favorite would be a chicken francese recipe that is very easy, nutritious and delicious!!
